  • 8 oz fresh cremini mushrooms, sliced
  • 8 oz fresh button mushrooms, sliced
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 2 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Clean the mushrooms with a damp cloth and roughly chop them.
  2. In a large pot over medium heat, add olive oil and sauté the chopped onions until translucent (about 5 minutes).
  3. Stir in minced garlic and cook until fragrant (about 1 minute).
  4. Add the chopped mushrooms and cook until soft and golden brown (about 8 minutes).
  5. Pour in the vegetable broth and bring to a gentle boil. Reduce heat and simmer uncovered for 10 minutes.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Return the soup to low heat, stir in heavy cream, season with thyme, salt, and pepper before serving.
