  • 1 pie crust (store-bought or homemade)
  • 1 cup canned pumpkin puree
  • 3/4 cup brown sugar (dark preferred)
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup granulated sugar (for caramel)
  • 1/2 cup heavy cream (room temperature)
  • 4 tbsp unsalted butter
  • 1/4 tsp sea salt (for enhancing flavor)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out the pie crust on a floured surface and fit it into a 9-inch pie dish. Trim edges.
  3. Blind bake the crust for 15 minutes using parchment paper and weights; remove weights and parchment.
  4. In a bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, and salt until smooth.
  5. For caramel, melt granulated sugar in a saucepan over medium heat until amber; whisk in heavy cream and butter until smooth.
  6. Pour pumpkin filling into the crust, drizzle caramel on top, then swirl gently.
  7. Bake an additional 30-35 minutes until set but slightly jiggly in the center.
  8. Cool completely before slicing; serve with whipped cream or extra caramel.
