  • 1 lb ground beef or turkey
  • 2 medium eggplants, sliced into rounds
  • 2 cups tomato sauce
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 3 tbsp butter (for béchamel)
  • 3 tbsp flour (for béchamel)
  • 2 cups milk (for béchamel)
  • 1 cup shredded mozzarella or cheddar cheese
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice eggplants, sprinkle with salt, and let sit for 30 minutes.
  3. In a skillet over medium heat, brown the ground meat. Add onions and garlic; sauté until fragrant.
  4. Stir in tomato sauce, cumin, and paprika. Simmer for 10 minutes.
  5. In another saucepan, melt butter over low heat. Whisk in flour; gradually add milk while whisking until thickened.
  6. In a greased baking dish, layer eggplant slices, half of the meat mixture, and half of the béchamel sauce. Repeat layers.
  7. Top with cheese and bake for 30-35 minutes until bubbly and golden.
  8. Allow to cool slightly before serving.
