- 2 medium eggplants, sliced into rounds
- 2 cups tomato sauce
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 3 tbsp butter (for béchamel)
- 3 tbsp flour (for béchamel)
- 2 cups milk (for béchamel)
- 1 cup shredded mozzarella or cheddar cheese
- Fresh cilantro or parsley (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice eggplants, sprinkle with salt, and let sit for 30 minutes.
- In a skillet over medium heat, brown the ground meat. Add onions and garlic; sauté until fragrant.
- Stir in tomato sauce, cumin, and paprika. Simmer for 10 minutes.
- In another saucepan, melt butter over low heat. Whisk in flour; gradually add milk while whisking until thickened.
- In a greased baking dish, layer eggplant slices, half of the meat mixture, and half of the béchamel sauce. Repeat layers.
- Top with cheese and bake for 30-35 minutes until bubbly and golden.
- Allow to cool slightly before serving.
