  • 4 medium zucchinis
  • 1 pound ground turkey or beef (lean)
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh oregano, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice each zucchini in half lengthwise and scoop out seeds to create boats.
  3. In a skillet, heat olive oil over medium heat. Add ground turkey or beef, cooking until browned (7-10 minutes).
  4. Stir in cherry tomatoes and cook until softened (3-5 minutes). Remove from heat.
  5. Mix in feta cheese, basil, oregano, salt, and pepper.
  6. Fill each zucchini half with the mixture and drizzle with extra olive oil if desired.
  7. Place on a baking sheet lined with parchment paper and bake for 25-30 minutes until tender.
