- 2 tbsp extra virgin olive oil
- 1 cup bell peppers (sliced)
- 1 cup cherry tomatoes (halved)
- ½ cup cucumbers (sliced)
- ½ cup crumbled feta cheese
- 1 cup quinoa or rice (uncooked)
- Juice of 1 lemon
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Marinate the steak by mixing olive oil, lemon juice, paprika, oregano, garlic powder, salt, and pepper in a bowl. Add the steak and let it marinate while you prepare other ingredients.
- Cook quinoa or rice according to package instructions.
- In a skillet over medium heat, sauté bell peppers and cherry tomatoes in olive oil for about 5-7 minutes until slightly softened.
- Remove the steak from the marinade (discard marinade) and sear in the same skillet over high heat for 3-4 minutes per side for medium-rare. Let it rest before slicing.
