Description

Mediterranean Delight Egg Muffin Cups are a vibrant, flavorful breakfast option that transports you to sunny shores with every bite.


Ingredients

  • 6 large eggs
  • 1 cup bell peppers, chopped
  • 1 cup fresh spinach, sautéed
  • ½ cup crumbled feta cheese
  • 2 tsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or olive oil.
  2. In a skillet, heat olive oil over medium heat and sauté chopped bell peppers and spinach for about 3-5 minutes until soft.
  3. In a bowl, whisk together the eggs, salt, pepper, and oregano until frothy.
  4. Gently fold in the sautéed vegetables and crumbled feta into the egg mixture.
  5. Pour the mixture into the muffin tin, filling each cup three-quarters full.
  6. Bake for 20–25 minutes until golden brown and set in the middle. Allow to cool slightly before serving.
