Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or olive oil.
- In a skillet, heat olive oil over medium heat and sauté chopped bell peppers and spinach for about 3-5 minutes until soft.
- In a bowl, whisk together the eggs, salt, pepper, and oregano until frothy.
- Gently fold in the sautéed vegetables and crumbled feta into the egg mixture.
- Pour the mixture into the muffin tin, filling each cup three-quarters full.
- Bake for 20–25 minutes until golden brown and set in the middle. Allow to cool slightly before serving.
