  • 1 cup breadcrumbs (plain or seasoned)
  • 4 cups mashed potatoes (homemade or store-bought)
  • 1 cup shredded sharp cheddar cheese
  • 1 large egg
  • 1 small onion (minced)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix ground beef, breadcrumbs, minced onion, garlic, egg, salt, and pepper until combined.
  3. Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  4. Bake for about 25 minutes until browned and cooked through.
  5. While meatballs bake, prepare mashed potatoes by boiling and mashing until creamy.
  6. Spread half of the mashed potatoes in the baking dish, layer baked meatballs on top, then add remaining mashed potatoes. Sprinkle cheddar cheese over the top.
