Description

Lemon Zucchini Bread is a delightful blend of fresh zucchini and zesty lemon, creating a moist and flavorful loaf that’s perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 medium zucchini (about 1 cup grated)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • ⅓ cup vegetable oil
  • ¼ cup fresh lemon juice
  • Zest of 1 lemon
  • 2 tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, combine flour, sugar, baking powder, salt, and lemon zest.
  4. In another bowl, whisk eggs and mix in oil and lemon juice.
  5. Gradually fold wet ingredients into dry ingredients along with grated zucchini until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
