  • 1 lb beef ribeye, thinly sliced
  • 1/4 cup Korean soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp light brown sugar
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 3 green onions, chopped
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced
  • 2 cups jasmine rice (uncooked)

Instructions

  1. In a bowl, mix soy sauce, sesame oil, brown sugar, garlic, and ginger. Toss in the ribeye slices and marinate for at least 30 minutes.
  2. Heat sesame oil in a skillet over medium heat. Add carrots and bell peppers; cook for about 3-4 minutes until softened.
  3. Increase heat to high and add marinated beef to the skillet. Stir-fry for about 5 minutes until browned and cooked through.
  4. Cook jasmine rice according to package instructions; fluff before serving.
  5. Spoon rice into bowls and top with sautéed veggies and bulgogi beef. Garnish with chopped green onions.
