- 1 lb beef ribeye, thinly sliced
- 1/4 cup Korean soy sauce
- 1 tbsp sesame oil
- 2 tbsp light brown sugar
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 3 green onions, chopped
- 1 cup carrots, sliced
- 1 cup bell peppers, sliced
- 2 cups jasmine rice (uncooked)
Instructions
- In a bowl, mix soy sauce, sesame oil, brown sugar, garlic, and ginger. Toss in the ribeye slices and marinate for at least 30 minutes.
- Heat sesame oil in a skillet over medium heat. Add carrots and bell peppers; cook for about 3-4 minutes until softened.
- Increase heat to high and add marinated beef to the skillet. Stir-fry for about 5 minutes until browned and cooked through.
- Cook jasmine rice according to package instructions; fluff before serving.
- Spoon rice into bowls and top with sautéed veggies and bulgogi beef. Garnish with chopped green onions.
