  • 2 lbs beef chuck roast, diced into 1-inch cubes
  • 1 large yellow onion, chopped
  • 4 cloves garlic, crushed
  • 3 medium carrots, sliced
  • 2 medium Yukon Gold potatoes, diced
  • 2 bay leaves
  • 4 cups beef broth
  • 1/4 cup soy sauce (low-sodium preferred)
  • 1 tsp black peppercorns
  • 2 tbsp vegetable oil

Instructions

  1. Prepare ingredients by chopping onions and carrots and dicing the beef.
  2. In a large pot over medium-high heat, heat vegetable oil. Sear beef cubes in batches until browned on all sides (about 5 minutes).
  3. Add chopped onions and crushed garlic to the pot; sauté until onions are translucent (3-5 minutes).
  4. Pour in soy sauce and stir to coat; add beef broth along with bay leaves and peppercorns. Bring to a gentle simmer.
  5. Introduce carrots and potatoes; cover and simmer on low heat for about 1½ hours or until tender.
