- 1 medium cauliflower head
- 2 tbsp jerk seasoning
- 2 tbsp olive oil
- 2 tbsp pineapple juice
- 1 tbsp garlic powder
- 1 tbsp lime juice
- ¼ cup coconut cream (for sauce)
- 2 garlic cloves (for sauce)
- 1 tsp dried oregano (for sauce)
- 2 tbsp orange juice (for sauce)
- Salt & pepper to taste
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Cut the cauliflower into bite-sized florets.
- In a large bowl, toss cauliflower florets with olive oil until well-coated.
- Combine jerk seasoning, garlic powder, pineapple juice, and lime juice in another bowl. Pour over the cauliflower and mix until fully coated.
- Spread the seasoned florets on the baking sheet and bake for 25-30 minutes until golden and crispy.
- For the mojo sauce, blend coconut cream, minced garlic cloves, oregano, orange juice, salt, and pepper until smooth.
- Serve hot drizzled with mojo sauce and garnish with chopped cilantro.
