Ingredients

  • 1 medium cauliflower head
  • 2 tbsp jerk seasoning
  • 2 tbsp olive oil
  • 2 tbsp pineapple juice
  • 1 tbsp garlic powder
  • 1 tbsp lime juice
  • ¼ cup coconut cream (for sauce)
  • 2 garlic cloves (for sauce)
  • 1 tsp dried oregano (for sauce)
  • 2 tbsp orange juice (for sauce)
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Cut the cauliflower into bite-sized florets.
  2. In a large bowl, toss cauliflower florets with olive oil until well-coated.
  3. Combine jerk seasoning, garlic powder, pineapple juice, and lime juice in another bowl. Pour over the cauliflower and mix until fully coated.
  4. Spread the seasoned florets on the baking sheet and bake for 25-30 minutes until golden and crispy.
  5. For the mojo sauce, blend coconut cream, minced garlic cloves, oregano, orange juice, salt, and pepper until smooth.
  6. Serve hot drizzled with mojo sauce and garnish with chopped cilantro.
