- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- ½ cup heavy cream (or half-and-half)
- 2 tsp dried Italian herbs
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Set your Instant Pot to sauté mode. Add olive oil. Once shimmering, add minced garlic and sauté for about 1 minute until fragrant.
- Season chicken with salt and pepper. Sear each side in the pot for 3-4 minutes until golden brown.
- Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Lock the lid and set to high pressure for 10 minutes.
- After cooking, let the pressure release naturally for 5 minutes before doing a quick release.
- Remove chicken and stir in heavy cream and Parmesan cheese over sauté mode until melted.
- Return the chicken to the pot, ensuring it's well-coated in sauce. Simmer on low heat for an additional minute.
- Serve over pasta or rice.
