  • 3 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp ground cinnamon
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the acorn squash lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the cut sides, then sprinkle with salt, pepper, and cinnamon.
  4. In a small bowl, whisk together honey and an additional tablespoon of olive oil until smooth.
  5. Brush the honey mixture generously over each half of the squash.
  6. Place the squash cut-side down on the baking sheet and bake for 30-35 minutes until fork-tender.
  7. Remove from oven, flip the squash over, and sprinkle with toasted nuts if desired before serving.
