- 4 cloves fresh garlic, minced
- 1/3 cup pure honey
- 1/4 cup low-sodium soy sauce
- 3 medium sweet potatoes, diced (about 1.5 lbs)
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together soy sauce, honey, minced garlic, salt, and pepper.
- Place chicken breasts in a resealable bag or shallow dish and pour half of the marinade over them; marinate for at least 30 minutes.
- While the chicken marinates, peel and dice the sweet potatoes into even cubes.
