  • 1 cup short-grain rice (Arborio or sushi rice)
  • 4 cups whole milk
  • 3/4 cup granulated sugar
  • 1 cinnamon stick
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • 2 eggs (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups water. Bring to a boil, then reduce heat and cover until tender (about 15 minutes).
  2. Stir in the whole milk and granulated sugar into the cooked rice. Simmer gently over low heat for about 30 minutes, stirring occasionally.
  3. Add the cinnamon stick and vanilla extract during simmering for flavor enhancement.
  4. If using eggs, whisk them separately, temper with some hot pudding mixture, then stir back into the pot.
  5. Remove from heat and discard the cinnamon stick. Serve warm or chill for later, topping with nutmeg or fresh fruit as desired.
