Instructions
- Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups water. Bring to a boil, then reduce heat and cover until tender (about 15 minutes).
- Stir in the whole milk and granulated sugar into the cooked rice. Simmer gently over low heat for about 30 minutes, stirring occasionally.
- Add the cinnamon stick and vanilla extract during simmering for flavor enhancement.
- If using eggs, whisk them separately, temper with some hot pudding mixture, then stir back into the pot.
- Remove from heat and discard the cinnamon stick. Serve warm or chill for later, topping with nutmeg or fresh fruit as desired.
