Homemade Mexican Street Corn, or Elote, is a vibrant and flavorful dish that brings the essence of summer fairs to your kitchen. Grilled corn on the cob is generously slathered in a creamy sauce made from mayonnaise and lime juice, then topped with crumbled Cotija cheese and a sprinkle of chili powder. The result? A delightful explosion of sweet, spicy, and tangy flavors that will have everyone coming back for more!


Ingredients

  • 4 ears fresh corn on the cob
  • 1/2 cup full-fat mayonnaise
  • 1/2 cup crumbled Cotija cheese (plus more for topping)
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder (adjust to taste)
  • Fresh cilantro (optional)

Instructions

  1. Shuck the corn, removing silks and rough ends.
  2. Preheat your grill to medium-high heat. Grill the corn for 10-15 minutes, turning occasionally until charred.
  3. In a bowl, mix mayonnaise, lime juice, chili powder, and half of the Cotija cheese.
  4. While warm, coat each ear of corn with the sauce mixture.
  5. Top with remaining Cotija cheese, extra chili powder, and cilantro if desired.
  6. Serve immediately and enjoy!
