  • 3 cups old-fashioned rolled oats
  • 1 cup chopped almonds or walnuts
  • ½ cup pumpkin or sunflower seeds
  • ½ cup honey or maple syrup
  • ¼ cup melted coconut oil
  • 2 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the oats, chopped nuts, seeds, and salt together.
  3. In another bowl, whisk together melted coconut oil, honey (or maple syrup), and vanilla until smooth.
  4. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer and gently press down.
  6. Bake for 25-30 minutes, stirring halfway through to ensure even browning.
  7. Allow to cool completely before breaking into clusters.
