Ingredients
Scale
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg (room temperature)
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 1/2 cup unsalted butter (softened)
- Buttercream filling (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
- In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg, mixing well after each addition. Then mix in the milk and vanilla extract.
- Gradually incorporate the dry mixture into the wet mixture until just combined; avoid overmixing to keep the pies tender.
- Use a cookie scoop or tablespoon to drop dough onto prepared sheets about two inches apart.
- Bake for 10–12 minutes until puffed and springy to touch. Allow cooling on sheets before transferring to wire racks.
- Once cooled, fill half of the cakes with buttercream filling and top with another half to create sandwiches.
