  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh baby spinach
  • 1 can (14 oz) marinated artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 1.5 cups shredded whole milk mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, cook diced chicken in olive oil until golden brown, about 6-8 minutes.
  3. In a bowl, combine cooked chicken, spinach, artichokes, cream cheese, garlic powder, onion powder, salt, and pepper; mix well.
  4. Fold half of the mozzarella cheese into the mixture and transfer it to the baking dish.
