- 2 lbs Yukon Gold Potatoes, washed and peeled
- 3 tbsp Extra Virgin Olive Oil
- 4 Garlic Cloves, minced

- Salt and Pepper to taste
- Juice of 2 Fresh Lemons
- 1 cup Crumbled Feta Cheese
Instructions
- Preheat your oven to 425°F (220°C).
- Cut the Yukon Gold potatoes into quarters or sixths.
- In a bowl, toss potatoes with olive oil, minced garlic, oregano, salt, and pepper until evenly coated.
- Spread seasoned potatoes on a baking sheet in a single layer. Roast for 30-35 minutes until golden brown and crispy.
- Remove from oven, sprinkle crumbled feta on top, and squeeze fresh lemon juice over the hot potatoes. Toss gently to combine. Serve immediately.
