Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 2 celery stalks, diced
  • 3 cloves fresh garlic, minced
  • 1 cup orzo pasta
  • Juice of 2 lemons (about 1/2 cup)
  • 2 tsp dried oregano
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing the onion, carrots, and celery.
  2. In a large pot over medium heat, add olive oil. Sauté onions and garlic until fragrant and translucent (3-5 minutes).
