  • 4 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 3 cloves fresh garlic, minced
  • Juice of 1 lemon
  • 3 tbsp extra virgin olive oil
  • 1 cucumber, diced
  • 1 small red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • 2 pita breads or 2 cups cooked rice
  • 2 tsp dried oregano
  • 2 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix Greek yogurt, garlic, lemon juice, olive oil, oregano, paprika, cumin, salt, and pepper to create the marinade.
  2. Coat chicken in the marinade and refrigerate for at least one hour (overnight preferred).
  3. Preheat grill or skillet over medium-high heat and cook chicken for 6–7 minutes per side until golden brown (internal temperature should reach 165°F/74°C).
  4. While chicken cooks, prepare tzatziki by mixing shredded cucumber (squeezed dry), Greek yogurt, garlic, lemon juice, olive oil, salt, and dill in a bowl.
  5. Slice cooked chicken and layer it in bowls with rice or pita. Top with cucumbers, red onion slices, feta cheese, and tzatziki sauce.
