  • 1 cup bell peppers (any color), diced
  • 14.5 oz can diced tomatoes (with juices)
  • 2 cups elbow macaroni or egg noodles
  • 2 cups low-sodium beef broth
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until soft, about 5 minutes.
