  • 2 cups low-sodium vegetable broth
  • 2 cups fresh spinach
  • 2 cups sliced mushrooms (button or cremini)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper (to taste)

Instructions

  1. Rinse quinoa under cold water until clear. Combine with vegetable broth in a pot and bring to a boil.
