  • 1 cup full-fat coconut milk
  • 4 cloves garlic (minced)
  • 1 medium onion (finely chopped)
  • 1 bell pepper (chopped, red or yellow)
  • 2 tbsp fresh lime juice
  • 1 tsp chili flakes (adjust to taste)
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

Instructions

  1. Prepare your ingredients by rinsing the shrimp and chopping the onion, bell pepper, and garlic.
  2. Heat oil in a large pan over medium heat. Sauté minced garlic and chopped onions until translucent.
  3. Add chopped bell peppers, cooking until softened (about 3–4 minutes).

  5. Pour in coconut milk, scraping up any bits from the bottom of the pan. Allow it to simmer gently.
  6. Stir in lime juice, chili flakes, salt, and pepper; let it simmer for another few minutes until slightly thickened.
