  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup grated parmesan cheese
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lemon
  • Bamboo skewers (soaked in water)

Instructions

  1. Cut chicken breasts into bite-sized cubes.
  2. In a large bowl, combine olive oil, minced garlic, parmesan cheese, Italian seasoning, salt, pepper, and lemon juice.
  3. Add chicken cubes to the marinade and mix well. Let it marinate for at least 30 minutes.
  4. While marinating, soak bamboo skewers in water for 15 minutes.
  5. Thread marinated chicken onto skewers with spacing for even cooking.
  6. Preheat grill to medium-high heat and grill skewers for about 10-12 minutes or until internal temperature reaches 165°F (75°C).
  7. Remove from grill and let rest briefly before serving.
