  • 4 lbs beef short ribs
  • 4 large yellow onions, thinly sliced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper (to taste)
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce

Instructions

  1. Preheat oven to 325°F (160°C). In a large Dutch oven, heat oil over medium-high heat. Sear short ribs for about 3-4 minutes on each side until browned. Remove from pot.
  2. In the same pot, add butter and sliced onions. Cook for 15-20 minutes until golden brown.
  3. Stir in minced garlic, thyme, salt, and pepper; cook for an additional minute.
  4. Add red wine, scraping up browned bits from the bottom of the pot. Let simmer for about 5 minutes.
  5. Pour in beef broth along with balsamic vinegar and Worcestershire sauce. Return short ribs to the pot.
  6. Bring to a gentle simmer, cover with a lid, and transfer to the oven. Braise for about 2-3 hours until tender.
  7. Once cooked, let ribs rest before serving over mashed potatoes or polenta.
