  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 8 oz feta cheese, crumbled
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp lemon zest
  • Honey or maple syrup for drizzling

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottom of a springform pan.
  3. Bake the crust for 10 minutes until golden brown. Let cool.
  4. In a mixing bowl, beat cream cheese and feta until smooth. Add sugar and mix well.
  5. Incorporate eggs one at a time, mixing gently; then stir in lemon zest.
  6. Pour filling over the cooled crust and bake for 40-45 minutes until slightly jiggly in the center.
  7. Cool at room temperature before refrigerating for at least four hours or overnight.
