  • 4 cups frozen shredded hash browns
  • 4 large eggs
  • 6 slices thick-cut bacon
  • 1 cup heavy cream
  • 2 cups low-sodium chicken broth
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Chives or green onions for garnish (optional)

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels.
  2. In the same skillet, cook the frozen hash browns in the remaining bacon grease until golden brown on one side (5-6 minutes), then flip.
  3. In a saucepan, melt 2 tablespoons of reserved bacon grease over medium heat and whisk in flour for 1-2 minutes. Gradually add chicken broth, stirring continuously until thickened.
  4. Stir in heavy cream and season with salt and pepper; cook for another 3-4 minutes.
  5. Fry eggs sunny-side-up in a separate skillet for about 3-4 minutes until whites are set but yolks remain runny.
  6. To serve, place hash browns on plates, top with fried eggs, and pour gravy over everything. Garnish with chives or green onions.
