  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 cup brown sugar, packed
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ¼ tsp salt
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Roast washed sweet potatoes on a baking sheet for about 45 minutes until tender.
  2. Once cool, peel and mash the sweet potatoes in a large bowl. Stir in brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and melted butter until smooth.
  3. In another bowl, mix flour, granulated sugar, salt, and softened butter until crumbly. Press this mixture into a greased 9×13 inch baking dish.
  4. Pour the sweet potato filling evenly over the crust. Bake for 30-35 minutes or until set and slightly golden.
  5. If desired, sprinkle chopped pecans on top during the last 10 minutes of baking. Cool completely before slicing.
