- 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
- 1 cup brown sugar, packed
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ cup unsalted butter, melted
- 1 cup all-purpose flour
- ½ cup granulated sugar
- ¼ tsp salt
- ½ cup chopped pecans (optional)
Instructions
- Preheat oven to 400°F (200°C). Roast washed sweet potatoes on a baking sheet for about 45 minutes until tender.
- Once cool, peel and mash the sweet potatoes in a large bowl. Stir in brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and melted butter until smooth.
- In another bowl, mix flour, granulated sugar, salt, and softened butter until crumbly. Press this mixture into a greased 9×13 inch baking dish.
- Pour the sweet potato filling evenly over the crust. Bake for 30-35 minutes or until set and slightly golden.
- If desired, sprinkle chopped pecans on top during the last 10 minutes of baking. Cool completely before slicing.
