- 8 oz rotini pasta
- 1 cup dill pickles, chopped
- 1/4 cup red onion, diced
- 1 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp fresh dill weed
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved (optional)
Instructions
- Boil salted water in a large pot. Add rotini pasta and cook until al dente (8-10 minutes). Drain and rinse under cold water.
- While the pasta cooks, chop dill pickles and dice red onion.
- In a large bowl, whisk together mayonnaise, mustard, and dill weed until smooth.
- Combine the cooled pasta with the dressing mixture, pickles, onions, salt, and pepper. Gently fold together.
- If using cherry tomatoes, add them now.
- Cover and refrigerate for at least one hour before serving to allow flavors to meld.
