Ingredients

  • 8 oz rotini pasta
  • 1 cup dill pickles, chopped
  • 1/4 cup red onion, diced
  • 1 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh dill weed
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved (optional)

Instructions

  1. Boil salted water in a large pot. Add rotini pasta and cook until al dente (8-10 minutes). Drain and rinse under cold water.
  2. While the pasta cooks, chop dill pickles and dice red onion.
  3. In a large bowl, whisk together mayonnaise, mustard, and dill weed until smooth.
  4. Combine the cooled pasta with the dressing mixture, pickles, onions, salt, and pepper. Gently fold together.
  5. If using cherry tomatoes, add them now.
  6. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
