  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup good-quality root beer
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 can (14.5 oz) diced tomatoes
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese for garnish (optional)

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a skillet over medium heat, sauté the onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  3. Brown the ground beef in the skillet; drain excess fat.
  4. Transfer the beef mixture to a crockpot. Add kidney beans, diced tomatoes, root beer, chili powder, cumin, salt, and pepper. Stir well.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  6. Taste and adjust seasonings as needed before serving hot with optional cheddar cheese on top.
