Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • 8 oz penne pasta
  • 1 cup chopped bell peppers (mixed colors)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley, chopped

Instructions

  1. Season chicken breasts with Cajun seasoning and place them in the bottom of the crock pot.
  2. Add bell peppers, onion, garlic, and chicken broth; stir to combine.
  3. Pour heavy cream over the top.
  4. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  5. About 30 minutes before serving, cook pasta according to package instructions; drain.
  6. Shred chicken in the crock pot and stir in cooked pasta until well-coated.
  7. Serve topped with Parmesan cheese and fresh parsley.
