- 2 medium sweet potatoes (about 500g), peeled and cubed
- 1 cup split red lentils (200g), rinsed
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- ¼ cup fresh cilantro, chopped (or parsley)
- 1 cup panko breadcrumbs (100g)
- 2 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Juice of 1 lemon
Instructions
- Boil sweet potatoes in water until tender (about 15 minutes). Drain and let cool.
- Cook lentils in a pot of water until soft but not mushy (10-12 minutes). Drain.
- Sauté the onion in oil over medium heat until translucent (5 minutes). Add garlic for another minute.
- In a bowl, mix sweet potatoes, lentils, sautéed onion mixture, cilantro, spices, lemon juice, salt, pepper, and panko breadcrumbs until combined but still chunky.
- Shape into small patties (2-3 inches wide) and place on a parchment-lined tray.
- Fry patties in oil over medium-high heat until golden brown on both sides (4-5 minutes per side).
