Description

Crispy sweet potato and red lentil patties are a delightful fusion of flavors and textures, perfect for any occasion. Ingredients

  • 2 medium sweet potatoes (about 500g), peeled and cubed
  • 1 cup split red lentils (200g), rinsed
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • ¼ cup fresh cilantro, chopped (or parsley)
  • 1 cup panko breadcrumbs (100g)
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Juice of 1 lemon

Instructions

  1. Boil sweet potatoes in water until tender (about 15 minutes). Drain and let cool.
  2. Cook lentils in a pot of water until soft but not mushy (10-12 minutes). Drain.
  3. Sauté the onion in oil over medium heat until translucent (5 minutes). Add garlic for another minute.
  4. In a bowl, mix sweet potatoes, lentils, sautéed onion mixture, cilantro, spices, lemon juice, salt, pepper, and panko breadcrumbs until combined but still chunky.
  5. Shape into small patties (2-3 inches wide) and place on a parchment-lined tray.
  6. Fry patties in oil over medium-high heat until golden brown on both sides (4-5 minutes per side).
