  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 8 large flour tortillas
  • 1 cup sour cream
  • 2 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 2 cups shredded cheese (Monterey Jack or cheddar)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook chicken in a pot over medium heat until internal temperature reaches 165°F (74°C). Shred the chicken once cooked.
  3. Sauté onion and garlic in the same pot until translucent (about 5 minutes).
  4. In a bowl, mix softened cream cheese with sour cream and half of the shredded cheese until smooth. Gradually stir in chicken broth until combined.
  5. Spread some sauce on the bottom of a baking dish. Fill tortillas with shredded chicken, roll them up tightly, and place seam-side down in the dish. Pour remaining sauce over enchiladas and sprinkle with remaining cheese.
  6. Bake for 20-25 minutes until bubbly and golden brown. Garnish with cilantro or jalapeños if desired.
