- 9 no-boil lasagna noodles
- 2 cups whole milk ricotta cheese
- 2 cups fresh spinach (or 1 cup frozen, thawed)
- 1 cup sliced fresh mushrooms
- 1 medium zucchini, thinly sliced
- 2 cups marinara sauce
- 2 cups shredded whole milk mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add sliced mushrooms, zucchini, and spinach; cook until softened.
- In a bowl, mix ricotta cheese with Italian seasoning, salt, and pepper.
- In a baking dish, layer marinara sauce on the bottom. Place lasagna noodles followed by ricotta mixture, sautéed vegetables, mozzarella cheese, and more marinara sauce.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden brown.
- Let rest for at least 10 minutes before serving.
