  • 12 oz fresh cheese tortellini
  • 4 oz diced pancetta
  • 2 large egg yolks
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ tsp freshly cracked black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions (3-5 minutes). Drain and reserve some pasta water.
  2. In a skillet over medium heat, cook the pancetta until crispy (4-5 minutes). Add minced garlic and sauté for 1 minute.
  3. In a bowl, whisk together egg yolks, heavy cream, Parmesan cheese, and black pepper until smooth.
  4. Reduce heat to low and add drained tortellini to the skillet. Pour in the sauce mixture and toss gently, adding reserved pasta water if necessary to achieve desired creaminess.
  5. Garnish with chopped parsley and serve immediately.
