  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese (whole milk)
  • ½ cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil (plus extra for brushing)
  • Salt and pepper to taste
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette into ½-inch pieces and arrange on a baking sheet. Brush with olive oil and toast for about 5-7 minutes until golden brown.
  2. In a skillet over medium heat, add olive oil and minced garlic; sauté for about 30 seconds. Add chopped spinach and cook until wilted, around 2-3 minutes.
  3. Remove from heat and mix in a bowl with ricotta, parmesan, salt, pepper, and lemon zest until well combined.
  4. Generously spoon the creamy mixture onto toasted baguette slices. Serve warm or at room temperature.
