- 12 jumbo pasta shells
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon dried oregano
- Cooking spray
Instructions
- Boil water in a large pot and add salt. Cook the jumbo pasta shells according to package instructions until al dente (8-10 minutes). Drain and set aside.
- In a skillet over medium heat, drizzle olive oil and sauté minced garlic until fragrant (about 30 seconds). Add chopped spinach and cook until wilted.
- In a large bowl, mix sautéed spinach with ricotta cheese, crumbled feta, salt, pepper, and dried oregano until well combined.
- Preheat the oven to 350°F (175°C). Stuff each cooled pasta shell with the creamy filling using a spoon or piping bag.
- Spread marinara sauce at the bottom of a baking dish and arrange stuffed shells upright. Drizzle additional sauce on top and sprinkle with grated Parmesan.
- Cover loosely with foil and bake for 25 minutes. Remove foil during the last 5 minutes for a golden finish.
