  • 1 lb fresh or frozen shrimp, cleaned and deveined
  • 1 cup cremini mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup dry white wine
  • 4 cups warm chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onions until translucent (3-5 minutes).
  2. Add minced garlic and sliced mushrooms; cook until mushrooms release moisture (about 5 minutes).

  4. Pour in white wine; let simmer until absorbed (3-4 minutes).
  5. Gradually add warm chicken broth one ladle at a time, stirring frequently until absorbed (18-20 minutes).
  6. Remove from heat; stir in Parmesan cheese and butter. Season with salt and pepper.
  7. Serve immediately, garnished with fresh parsley.
