  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes per side until golden brown (internal temp should be 165°F). Remove from skillet.
  2. In the same skillet, sauté minced garlic until fragrant (about 30 seconds).
  3. Pour in chicken broth; bring to a simmer. Add orzo and cook for 8-10 minutes until al dente.
  4. Lower heat and stir in heavy cream and Parmesan until melted.
  5. Add spinach until wilted (about 1 minute). Slice the chicken and return to the skillet, mixing well.
