- 1 tsp vanilla extract
Instructions
- Preheat your oven to 400°F (200°C). Wash sweet potatoes and poke holes in them.
- Bake the sweet potatoes on a parchment-lined baking sheet for 45-60 minutes until tender.
- In a pan over medium heat, melt butter and add diced apple, cranberries, brown sugar, cinnamon, and vanilla until soft.
- Once cool, slice sweet potatoes in half and scoop out the insides into a bowl. Mix with the apple-cranberry mixture and nuts.
- Spoon the filling back into the potato skins and bake for an additional 15-20 minutes until heated through.
