  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup melted butter
  • 1/4 cup brown sugar (for topping)
  • 1 tsp ground cinnamon (for topping)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
  3. In another bowl, beat eggs with milk and melted butter until smooth.
  4. Gradually add the wet mixture to the dry ingredients, folding gently until just combined.
  5. In a separate bowl, mix topping ingredients: brown sugar, cinnamon, and nuts if using.
  6. Spoon batter into each muffin cup until two-thirds full and generously sprinkle with the topping mixture.
  7. Bake for 18-20 minutes or until golden brown. Allow to cool for five minutes in the pan before transferring to a wire rack.
