Instructions
- Preheat your oven to 350°F (175°C). Grease a baking pan.
- In a bowl, whisk together the flour and baking powder until combined.
- In another bowl, beat the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Gradually stir in the coconut milk until smooth.
- Gently fold the shredded coconut into the wet mixture.
- Gradually add the dry ingredients to the wet mixture using a wooden spoon, mixing until just combined.
- Pour batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes or until golden brown; a toothpick should come out clean.
- Allow to cool for ten minutes before transferring to a wire rack.
