  • 3 ripe bananas (mashed)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg (room temperature)
  • 1/4 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts or pecans (chopped, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash bananas until smooth.
  3. Add melted butter, sugars, egg, and vanilla to mashed bananas; mix well.
  4. In another bowl, combine flour, baking soda, salt, and cinnamon.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. In a small bowl, mix additional sugar with cinnamon for the swirl.
  7. Pour half the batter into the loaf pan; sprinkle half the cinnamon-sugar mixture over it. Repeat with remaining batter and top with remaining swirl.
  8. Bake for 55-65 minutes or until a toothpick comes out clean. Let cool before slicing.
