  • 34 ripe bananas (mashed)
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth yet slightly chunky.
  3. Stir in melted butter, followed by granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually fold into the wet mixture without overmixing.
  5. Pour half of the batter into the prepared pan; sprinkle with half of the cinnamon-sugar mixture. Add remaining batter and top with more cinnamon-sugar.
  6. Bake for 60-65 minutes or until a toothpick comes out clean. Let cool before removing from the pan.
