  • 2 cups fresh spinach, wilted
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed)
  • 1 tsp herbs de Provence
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat oven to 375°F (190°C). Trim excess fat from the beef and cut a pocket lengthwise down the center.
  2. In a skillet over medium heat, sauté garlic until fragrant. Add spinach and sun-dried tomatoes; cook until wilted (about 3 minutes).
  3. Stir in Parmesan cheese and herbs de Provence until fully combined. Remove from heat.
  4. Fill the beef pocket with the stuffing mixture; secure with toothpicks or kitchen twine.
  5. Heat olive oil in an oven-safe pan over medium-high heat. Sear all sides of the tenderloin until golden brown (about 4-5 minutes).
  6. Transfer to the preheated oven; roast until internal temperature reaches 130°F (54°C) for medium-rare (approximately 25-30 minutes).
