Chocolate Peanut Butter Cheesecake Bars are a decadent dessert that perfectly blends creamy cheesecake, rich chocolate, and smooth peanut butter.   • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • 3 large eggs
  • 2 tsp vanilla extract
  • ¼ cup unsweetened cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until crumbly. Press into the bottom of a lined baking pan.
  3. Bake crust for about 10 minutes until golden brown. Let cool slightly.
  4. In a mixing bowl, beat cream cheese until smooth. Gradually add remaining sugar and blend until fluffy.
  5. Mix in peanut butter until fully combined. Add eggs one at a time, blending after each addition.
  6. Stir in vanilla extract and cocoa powder until just combined. Pour over cooled crust.
  7. Bake for 25-30 minutes or until edges are set but center is slightly jiggly.
  8. Cool completely at room temperature, then chill in the fridge for at least two hours before slicing.
