  • 1 lb lean ground beef
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) chili beans, drained
  • 1 cup finely ground cornmeal
  • 1 ½ cups shredded cheddar and Monterey Jack cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 large eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, sauté onion, garlic, and bell pepper until soft. Add ground beef and cook until browned; drain excess fat.
  3. Stir in diced tomatoes, chili beans, cumin, chili powder, salt, and pepper. Simmer for about 5 minutes.
  4. In a bowl, whisk together cornmeal, eggs, milk, salt, baking powder, and half of the cheese until smooth.
  5. Pour half of the cornbread batter into the baking dish. Layer beef mixture on top followed by the rest of the cornbread batter and remaining cheese.
  6. Bake for 30-35 minutes or until golden brown on top and a toothpick comes out clean.
