  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fresh mozzarella cheese, diced
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves, chopped
  • 1 package (17.3 oz) puff pastry sheets
  • 1 large egg (for egg wash)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cook the seasoned chicken breasts in a skillet over medium heat until fully cooked (about 7-8 minutes per side). Allow them to cool slightly before shredding.
  3. In a bowl, combine shredded chicken with mozzarella, Parmesan, basil, garlic powder, salt, and pepper.
  4. Roll out thawed puff pastry sheets on a floured surface and cut into squares.
  5. Place generous amounts of the chicken mixture onto each square. Fold over diagonally and seal edges with a fork.
  6. Brush with beaten egg and bake for 20-25 minutes until golden brown.
